Some nouns can be countable or uncountable, depending on the meaning.
For example, "We had chicken for dinner." Here, "We" is the subject, "had" is the verb, and "chicken" means meat, so we do not use "a" or "s". In Japanese, you can say "夕食にチキンを食べた" with the same noun form, but English needs the countable or uncountable choice. If you mean one bird, say "a chicken". If you mean the food, say "chicken".
同じ名詞でも、意味によって可算名詞にも不可算名詞にもなります。
たとえば "We had chicken for dinner." では、"We" が主語、"had" が動詞、"chicken" は肉の意味なので、"a" も "s" もつけません。日本語では「夕食にチキンを食べた」と同じ形で言えますが、英語では可算か不可算かを選ぶ必要があります。1羽の鶏を言うなら "a chicken"、食べ物を言うなら "chicken" です。

よくある間違い
Japanese learners often put "a" in front of the food meaning, or add "s" to an uncountable use.
Wrong: "I ate a chicken for lunch."
Right: "I ate chicken for lunch."
日本人学習者は、食べ物の意味なのに "a" を付けたり、不可算名詞に "s" を付けたりしがちです。
誤: "I ate a chicken for lunch."
正: "I ate chicken for lunch."
